Egg Muffin Recipe

Egg Muffins

Ingredients

* 3/4 cup of spinach

* 4-6 whole mushroom chopped

* 1/2 bell chopped (optional)

* 1/4 cup of sliced sun dried tomatoes

* 2 cups of shredded cheese

* 1/2 cup of blue cheese crumbles (optional)

* 1/4 cup of milk

* 6 eggs

* 1 teaspoon of garlic powder (optional)

* 1 teaspoon of salt

* 1 teaspoon of pepper

* 1 tablespoon of olive oil (your choice of oil)

Directions

Preheat oven for 350 degrees

*Heat olive oil

*Cook the spinach, mushroom, and bell pepper until somewhat wilted/Sprinkle in spices while cooking

*Stir eggs until smooth

*Stir in cheese

*Add sun-dried tomatoes

*Mix all the ingredients in with the egg mixture

*Scoop out 1/4 cup of mixture into a greased muffin pan

*Bake for 30 plus minutes.
